Lemon Potatoes, Chicken Souvlaki, And Tzatziki
  1. Add all ingredients for Lemon Potatoes to a roasting pan & bake at 400F for 35-45 minutes or until edges are starting to brown.

  2. In a large bowl, combine lemon juice, olive oil, minced garlic, chopped parsley, oregano, cumin powder, chili flakes, salt & pepper for Chicken Souvlaki.

  3. Cut chicken breasts into 1-inch cubes and mix into bowl with other ingredients. Cover and place in the fridge to marinate for 30 minutes or up to 2 hours.

  4. Preheat outdoor grill or grill pan and drizzle with 2 tbsp olive oil. Thread chicken pieces onto skewers and place on grill, turning on all sides for about 8-10 minutes, until chicken is fully cooked through (165 F).

  5. Grate ½ an english cucumber using the large side of a box grater for Tzatziki. Place grated cucumber in a fine mesh strainer to drain excess water.

  6. Using your hands, squeeze all remaining water out of cucumber and transfer to bowl with Greek yogurt, garlic, olive oil, vinegar, salt, and pepper. Mix together until combined.
