Add 400ml milk to a saucepan. Crush the cardamom pods. Roughly chop the ginger and add to the milk with all the spices. Season with ½ tsp salt and all the black pepper.
Turn the heat up to medium-high and bring the milk to the boil. Once boiling, turn the heat down and simmer for 5-10 mins.
Meanwhile, chop the white chocolate. Remove the milk from the heat, strain into a bowl, add the white chocolate and let it sit for a couple of minutes until the white chocolate melts. Stir together.
Add the remaining cold milk to the white choc turmeric concentrate. Tip ice into glasses, pour over the turmeric white chocolate milk and top with whipped cream. Finish with a dusting of turmeric or cinnamon, or finely grate over more white chocolate.
