In a large bowl, add the cooked quinoa, chickpeas, shredded chicken (if using), cucumber, red onion, feta, pistachios, parsley, and mint.
Drizzle with lemon juice and olive oil. Sprinkle with salt and pepper.
Toss everything together until well combined.
Serve immediately or store in an airtight container in the fridge for 3–4 days.
