The Best Vegan Pâté
  1. Soak tomatoes in hot water for 5-10 minutes.

  2. Roughly chop mushrooms and veggies and place them on a preheated baking tray. Sprinkle with salt, drizzle with olive oil and roast at 200°C for 25-35 minutes until nicely browned, tossing after 15 minutes.

  3. Blend all ingredients in a high-speed blender or food processor until smooth, adjust seasoning and transfer to an air-tight container or jar.
