Boil approximately 4 lbs of chicken legs for 5 minutes
Remove chicken and rinse under cold water
Add soy sauce, mirin, gochugaru, sugar, gochujang, water, minced garlic, potatoes, and onion to a pot
Boil for about 20 minutes until potatoes are soft
Add green onion and korean chili peppers
Boil for another 5 minutes
Serve immediately
Note: Start with 1 cup of water and add more as needed, but the stew should not be soupy
