Coconut Chicken With A Zesty Bang Bang Sauce
  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. In a food processor, combine coconut, cornflakes, paprika, garlic powder, onion powder, and a pinch of salt. Blend until fine crumbs form. Stir in sesame seeds and transfer to a bowl.

  3. Whisk eggs and hot sauce in a separate bowl. Add chicken tenders, tossing to coat evenly. Dredge each chicken piece in the crumb mix, pressing gently. Place on prepared baking sheet and drizzle with olive oil.

  4. Bake for 15–20 minutes until golden and cooked through.

  5. In a bowl, whisk together mayonnaise, Thai chili sauce, coconut aminos, hot sauce, rice vinegar, garlic, and lime zest until smooth.

  6. Plate chicken with lime wedges and chopped green onions. Drizzle or dip in Bang Bang sauce.
