  4. Rub the chicken thighs with some of the seasoning mixture as well, ensuring they are fully coated with the spices.

  5. Place the seasoned potatoes in a single layer in a large baking dish.

  6. Arrange the chicken thighs on top of the potatoes.

  7. If you’re using the optional sauce, mix the chicken broth, Dijon mustard, and honey (if using) in a small bowl and pour it over the chicken and potatoes.

  8. Bake the chicken and potatoes in the preheated oven for 35-45 minutes, or until the chicken is cooked through and the potatoes are tender.

  9. To ensure the chicken reaches an internal temperature of 165°F (74°C), you can check it with a meat thermometer.

  10. For crispy skin, broil the chicken for an additional 2-3 minutes at the end of baking.

  11. Once cooked, remove from the oven and garnish with fresh parsley and lemon slices.
