Make vegan beef by combining black beans, vital wheat gluten, garlic powder, onion powder, paprika, all-purpose seasoning, salt, black pepper, nutritional yeast, and water. Knead to make a dough and slice into 1-inch pieces.
Add a dash of coconut or olive oil to a pan and add meat pieces. Add minced garlic, 1 tbsp soy sauce and 150 ml broth. Leave to simmer for 15 minutes on a low to medium heat.
Add all remaining ingredients (onion, carrots, bell peppers, potatoes, spring onions, thyme, vinegar, ketchup, coconut milk, 300 ml broth, browning, all spice, vegan butter, and scotch bonnet) to a pan and stir together. Leave to cook for 40 minutes on a medium heat, stirring occasionally. Add more broth if your stew needs more sauce.
Serve with rice.
