Smoked Salmon Rillette
  1. Slowly cook salmon in oil over low heat until cooked through, reaching 50°C if using a temperature probe

  2. Prepare all ingredients: dice smoked salmon and cucumbers, chop herbs

  3. Mix egg yolk, mustard and vinegar in a bowl

  4. Slowly whisk in rapeseed oil until thick mayonnaise forms

  5. Mix all rillette ingredients in a large bowl until desired texture is achieved

  6. Check seasoning and serve
