Preheat oven to 375°F. Lightly grease an 8x8 or 9x9 baking dish with avocado oil
Shred your cheeses
Cook pasta in salted water until just al dente (about 5 min), it'll continue to cook in the oven. Drain and set aside
Combine Good Culture cottage cheese, half & half, bone broth, egg, mustard powder, garlic powder, onion powder, salt, pepper, and paprika. Blend with an immersion blender until completely smooth and creamy
In a large mixing bowl, toss the cooked pasta with the blended sauce and all four cheeses (sharp cheddar, white cheddar, gouda, jack). Stir until everything is evenly coated and beginning to melt
Transfer to a baking dish and smooth the top
Top with grated parmesan, chives sprinkle of paprika and black pepper
Bake uncovered for 25–30 minutes, until bubbly and golden brown on top
Cool slightly before serving so the sauce thickens and gets that perfect, scoopable texture
Sprinkle with more chives and enjoy
