Mini Cheesecake Santa Hats
  1. Preheat oven to 325 F. Line a regular muffin pan with liners

  2. Combine crust ingredients and evenly portion out the crust between all 12 liners - press down firmly

  3. Bake crust for 5 mins then remove and let it cool

  4. With a stand mixer, combine cream cheese and sour cream until smooth, scrape down as needed

  5. Add the sugar and vanilla then mix to combine

  6. Mix the eggs in one at a time and make sure to not over mix

  7. Portion out the filling between the 12 liners and bake for 16-20 mins until the tops have set

  8. Remove from the oven and let the cool on the counter, after transfer to the fridge to cool for another 1-4 hrs

  9. Once the cheesecakes are cooled, decorate as shown in the video
