Fresh Tomato Bacon Jam

Spread on sandwiches, dress up eggs, or add to a charcuterie board.

Makes 4 cups.

  1. Preheat oven 400°F

  2. Slice bacon in half and arrange on a baking sheet. Bake for 10-15 minutes until cooked but not crispy (usually 8 minutes per side).

  3. Add rendered bacon fat to a skillet and cook onions for 7 minutes, stirring often.

  4. Add tomatoes, paprika, salt, brown sugar and maple syrup. Cook for 25 minutes, stirring frequently. When liquid has reduced add balsamic vinegar and stir.

  5. In a food processor, pulse warm jam several times to chop the bacon.
