¼ cup + 2 tablespoons old-fashioned oats

2 tablespoons melted coconut oil

1 large egg

2 tablespoons milk ((plant-based or dairy milk))

3 tablespoons pure maple syrup

¼ teaspoon baking powder

⅛ teaspoon fine sea salt

Topping ideas: fresh berries, chia seeds, drizzle of maple syrup

¼ cup cashews

¼ cup + 2 tablespoons old-fashioned oats

2 tablespoons melted coconut oil

1 large egg

2 tablespoons milk ((plant-based or regular milk))

3 tablespoons pure maple syrup

¼ teaspoon baking powder

⅛ teaspoon fine sea salt

1 tablespoon miniature chocolate chips

Topping ideas: additional chocolate chips, drizzle of maple syrup

¼ cup cashews

¼ cup + 2 tablespoons old-fashioned oats

2 tablespoons melted coconut oil

1 large egg

2 tablespoons milk ((plant-based or regular milk))

2 tablespoons Dutch-process cocoa powder

¼ teaspoon baking powder

⅛ teaspoon fine sea salt

Optional: 1 tablespoon miniature chocolate chips

Same ingredients as in "chocolate" but add a spoonful of nut butter and a sprinkle of extra chocolate chips on top!

PREP: Preheat the oven to 350 degrees F. Generously grease 8-ounce ramekins with cooking spray and set aside. (See Note 3 if you only want to make one serving.)
PLAIN VERSION: In a blender, combine all the ingredients in the order listed until smooth, about 90-120 seconds. There shouldn't be any chunks of oats or nuts. (Blend again if needed.) Use a ⅓ measuring cup to evenly divide the batter into prepared ramekins (only putting ⅓ cup of mixture in each ramekin). Transfer prepared ramekins to a baking sheet and bake for 20-22 minutes or until a toothpick comes out clean or with moist crumbs when inserted into the center. The cake shouldn't look gooey on top. Remove and top with toppings of choice and enjoy promptly!
