Preheat oven to 375 and line a 9x13” baking pan with parchment paper.
Blend eggs, cottage cheese, sea salt, and pepper until smooth.
Pour blended egg mixture into prepared baking dish; bake for 17-20 minutes until eggs are cooked through.
Mix ground chicken, maple syrup, olive oil, cinnamon, poultry seasoning, dried sage, garlic powder, sea salt, black pepper, and red pepper flakes together until well-combined.
Divide chicken mixture into 9-10 equal portions.
Heat a large pan over medium heat.
Add chicken patties to heated pan, carefully pressing them down as they will shrink up while cooking.
Cook for 3-4 minutes until browned; flip and cook 2-3 more minutes until cooked through.
Cut egg bake into circles or squares.
Slice English muffins.
Add egg patty, a sausage patty, and a slice of cheese.
Wrap sandwich in parchment paper or foil.
Freeze until ready to heat and enjoy!
To reheat, thaw sandwich in refrigerator the night before.
To reheat in microwave, wrap sandwiches in a damp paper towel. Microwave ~2 mins until eggs and sausage are heated through.
To reheat in oven, preheat to 350 and allow sandwich to sit on counter while oven preheats. Place sandwich on a baking sheet and bake until heated through.
