Pat chicken dry and season with olive oil, Cajun seasoning, paprika, oregano, and black pepper.
Heat oil in a deep pan over medium-high heat. Sear chicken until browned, then remove.
Sauté onion, bell peppers, celery, and tomato until softened.
Stir in Creole seasoning and tomato paste, cook 1–2 minutes.
Add garlic and cook for 30 seconds.
Stir in rice and toast for 1 minute.
Pour in broth, add adobo, cayenne, bay leaves, and thyme.
Add chicken back on top of the rice.
Cover and simmer on low 25–30 minutes, until rice is tender and liquid is absorbed.
Rest 5 minutes, remove herbs, fluff, and serve.
