Heat a little oil over medium-high heat.
Add your aubergine, tomatoes and garlic.
Cook for a few minutes until your aubergine has browned a little.
Then add 1-2 tbsp of water to the pan, lower the heat and cover the pan.
Cook for 15-20 minutes until your aubergine and tomatoes are soft.
Remove skin of aubergine and tomatoes (optional) and then mash them.
Add in tomato puree and seasoning, stir and cook for a further few minutes.
Add cooked pasta and enjoy.
