Viral Aubergine Tomato Pasta
  1. Heat a little oil over medium-high heat.

  2. Add your aubergine, tomatoes and garlic.

  3. Cook for a few minutes until your aubergine has browned a little.

  4. Then add 1-2 tbsp of water to the pan, lower the heat and cover the pan.

  5. Cook for 15-20 minutes until your aubergine and tomatoes are soft.

  6. Remove skin of aubergine and tomatoes (optional) and then mash them.

  7. Add in tomato puree and seasoning, stir and cook for a further few minutes.

  8. Add cooked pasta and enjoy.
