Cut the pork into 1-inch thick strips.
Coat the pork strips with the barbecue sauce and marinate for at least 4 hours or overnight in the fridge.
Preheat the oven to 180°C (350°F).
Place the marinated pork strips on a baking tray and pour the remaining sauce over the top.
Bake for 20 minutes.
Remove from the oven, drizzle the honey over the pork, and bake for another 20 minutes.
Reduce the oven temperature to 150°C (300°F) and bake for a final 20 minutes, turning the pork through the sauce.
Remove the pork from the oven and transfer to a plate.
Use the sauce left in the pan to make a gravy by adding 2 cups of stock and reducing it down.
