Preheat the oven to 350 degrees and grab a lined baking tray.
Start by combing melted butter, sugars and egg in a bowl. Mix well and then add the sifted matcha powder and the almond / vanilla extracts.
Combine the flour, baking soda, baking powder and salt in a separate bowl and gradually add to the wet mixture. Don't overmix!! Fold in the white chocolate chunks at the very end.
Scoop 2 tbsp sized balls of dough onto the baking sheet. Bake for 10 minutes. Makes 12 cookies.
