Preheat oven to 240°C (464°F)
Peel and slice potatoes thinly
Infuse cream: Heat cream, milk, garlic, thyme, bay leaf, butter, salt, pepper, and nutmeg. Simmer for a few minutes, then remove thyme and bay leaf
Assemble gratin: Butter a baking dish, layer potatoes, pour cream mixture, and sprinkle with cheese. Repeat layering if needed
Top with remaining cheese and bake for 30-40 minutes or until golden brown
