Add the sweet potatoes to the bowl and toss until well coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and caramelized.
Remove from the oven and sprinkle with sesame seeds and chopped green onions before serving.
