Poach chicken breast, cool and cube into bite-sized pieces
Slice red onion thinly
Shred carrot and dice red pepper
Chop kale finely
Drain beans of choice
Combine all ingredients in a large bowl: chicken, red onion, beans, carrot, red pepper, and kale
Add crumbled feta and chopped peppers with their oil
Top with chopped pistachios
Drizzle with olive oil and red wine vinegar
Add lemon juice and zest
Season with salt, pepper, and chili flake to taste
Toss well to combine and let sit for a few days for flavors to develop
