Shaved Tofu Pita
  1. Using a vegetable peeler, peel the tofu to create thin strips

  2. Add tofu to a large container along with the seasonings (garlic powder, onion powder, smoked paprika, dried parsley, ground cumin, salt, pepper, soy sauce, olive oil, and maple syrup), and shake to combine

  3. Heat a frypan over high heat and add a dash of oil

  4. Add the tofu and cook until lightly golden, tossing occasionally (alternatively bake in a preheated oven at 200°C/400°F or air fry)

  5. Combine the sauce ingredients (yogurt, tahini, salt, lemon juice, and garlic) together in a bowl

  6. Toss the salad ingredients (red onion, parsley, cucumber, tomato, lemon juice, and olive oil) together in a large bowl

  7. Heat the pita in the microwave or pan to soften

  8. Add the sauce, tofu, salad and pickled onion to the pita

  9. Fold up and enjoy
