Using a vegetable peeler, peel the tofu to create thin strips
Add tofu to a large container along with the seasonings (garlic powder, onion powder, smoked paprika, dried parsley, ground cumin, salt, pepper, soy sauce, olive oil, and maple syrup), and shake to combine
Heat a frypan over high heat and add a dash of oil
Add the tofu and cook until lightly golden, tossing occasionally (alternatively bake in a preheated oven at 200°C/400°F or air fry)
Combine the sauce ingredients (yogurt, tahini, salt, lemon juice, and garlic) together in a bowl
Toss the salad ingredients (red onion, parsley, cucumber, tomato, lemon juice, and olive oil) together in a large bowl
Heat the pita in the microwave or pan to soften
Add the sauce, tofu, salad and pickled onion to the pita
Fold up and enjoy
