Venison Stew
  1. Pat venison dry, season with salt, pepper, and paprika, then toss in flour to coat.

  2. Sear venison in batches in hot olive oil, 3–4 minutes per side until browned. Set aside.

  3. Sauté onions and celery for 5 minutes. Add garlic and tomato paste, cook 1 minute.

  4. Deglaze with red wine, scraping up browned bits. Simmer 2 minutes.

  5. Return venison to pot. Add broth, Worcestershire, thyme, and bay leaves. Bring to a boil.

  6. Reduce to low, cover, and simmer for 1 hour 30 minutes.

  7. Add carrots and potatoes. Simmer uncovered 45–60 minutes until tender and thickened.

  8. Remove bay leaves, adjust seasoning, garnish with parsley, and serve.
