Tofu & Vermicelli Noodle Stir Fry
  1. Pour boiling water over the noodles then cover with a lid or plate and let sit for 5 - 10 minutes

  2. Bring a large non stick pan to medium heat with the oil and fry the tofu until crispy

  3. Whilst the tofu is frying, whisk together all your sauce ingredients

  4. Once the tofu is crispy, add the noodles, carrot, zucchini and capsicum to the pan with the sauce, mix well over the heat for a couple of minutes (not too long, we don't want our veggies over cooked and soft!)

  5. Transfer to 3 containers or serve to 3 people. Top with the sesame and spring onion and enjoy 🌱
