Prepare the Bread Bowl: Preheat your oven to 450°F and line a baking sheet with parchment paper. Cut off the top of the sourdough loaf to create a lid and hollow out a circle about the size of the brie. Be careful not to slice all the way to the bottom. Score the sides of the loaf to create pull-apart sections for dipping, making sure to keep the bottom intact.
Prepare the Bread Pieces: Tear the removed bread into small chunks and place them along with the top of the loaf (lid) on the baking sheet. Drizzle with olive oil and sprinkle with salt.
Assemble the Brie Bowl: Place the brie into the hollowed bread bowl. Add the prosciutto, minced garlic, thyme, and a sprinkle of fresh cracked pepper. Drizzle a little olive oil over the top.
Bake: Place the bread bowl and chunks into the oven for about 15 minutes, or until the cheese is fully melted and the bread is toasted.
Add Hot Honey: Once out of the oven, drizzle the baked brie and bread with the hot honey and sprinkle with extra thyme leaves.
Hot Honey: In a small saucepan, gently warm ¼ cup clover honey with 1 tsp chili paste (adjust to your preferred heat level) over low heat. Stir and remove from heat.
Serve: Enjoy your warm, melty baked brie by tearing the bread apart for dipping
