In a saucepan, combine the apples, brown sugar, cinnamon, lemon juice, water, and butter
Stir well and then add the cornstarch slurry. Cook until the apples are tender
Set aside to cool
Beat together the butter, granulated sugar, and brown sugar
Add in the eggs, cream, and milk until well combined
Fold in the flour, salt, and baking powder
Pour into a lined 8” cake tin and then add the cooled apples on top
Combine the brown sugar, granulated sugar, cinnamon, and salt
Mix in the melted butter and then fold in the flour, rubbing with your finger tips
Sprinkle over the top of the apples and then bake in the oven at 160°C Fan for 50-70 minutes (depending on the oven), check with a skewer after the 50 minute mark
Enjoy warm or cold! I serve mine with Custard!!
