Slice the mini mixer tomatoes in half and place them cut side up on an oven tray lined with parchment paper.
Drizzle with olive oil and salt. Place in the oven at 250 degrees F for about 3 hours, until fully dried out.
For storage, place the dried tomatoes in a jar and fully immerse them in olive oil. Optionally, add basil leaves, black pepper, and oregano.
