Clean chicken by giving it a good rub with salt then rinse.
Bring water to a full boil. Enough water to submerged the chicken.
Add salt, turmeric powder, ginger and chicken.
Cover and bring back to a boil. Uncovers and scoop out all the scums.
Cover and let simmer for 20-25 minutes on medium low. Depending on how big the chicken are. My is about 2.5 lbs (20 minutes).
Removes chicken and let cool completely. You can also put chicken in ice cold water for crunchier skin.
Wash and rinse rice. Add chicken broth from the chicken. Cook like you normally cook your rice. Using the electric rice cooker.
Season leftover broth with 1 teaspoon msg,1 sugar, 1 teaspoon fish sauce and salt to taste.
Add ginger, garlic, and green onion in an electric chopper for a quick minute. You can also hand chopped.
In a sauce pan add cooking oil. Heat oil until hot.
Add all the ingredients in and stir for about a minute. Taste and adjust.
