Grapefruit-basil relish
  1. Cut away peel and pith from grapefruits. Cut grapefruit's into wedges, then slice crosswise into ½-inch-thick pieces. Place grapefruit in strainer set over bowl and let drain for 15 minutes; measure out and reserve 1 tablespoon of the drained juice.

  2. Combine reserved juice, shallot, basil, lemon juice, and oil in bowl. Stir in grapefruit and let sit for 15 minutes.

  3. Season with salt and pepper to taste. (Relish can be refrigerated for up to 2 days.)
