Wash under running water, dry thoroughly
Poke prodigiously with a fork
Rub with cooking oil and season with Kosher salt
Set potatos directly on oven rack in mid to top ⅓ of oven. Include a drip pan
Bake at 300F for 1 hour
Remove and coat lightly with oil
Return to oven and cook at 400F for 10 minutes
Remove, pierce with a fork (not a knife) and squeeze to open up.
