Triple Ginger Honey Loaf Cake
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

  2. In a medium bowl, whisk together the all-purpose flour, baking soda, ground ginger, cinnamon, nutmeg, and salt. Set aside.

  3. In a large mixing bowl, use an electric mixer to cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.

  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then, mix in the honey and grated fresh ginger until well combined.

  5. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined; do not overmix.

  6. Gently fold in the chopped crystallized ginger until evenly distributed throughout the batter.

  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can cover it loosely with aluminum foil.

  9. Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

  10. Slice the loaf and serve it warm or at room temperature. This cake pairs beautifully with a cup of tea or coffee. Store any leftovers in an airtight container at room temperature for up to 3 days.
