In a bowl or a glass jar, combine the old-fashioned rolled oats, oat milk, pumpkin puree, maple sugar, Pumpkin Pie Spice, and Maple Sugar.
Stir well until all the ingredients are thoroughly mixed.
Cover the bowl or jar with a lid or plastic wrap.
Place it in the refrigerator and let it chill and soak overnight or for at least 4 hours. This allows the oats to absorb the flavors and soften.
Before serving, give the overnight oats a good stir to combine any settled ingredients.
If desired, top with apples for added texture before serving.
