Brush tortilla with olive oil
Fry tortilla for a couple of minutes until golden brown
Beat 4 eggs with salt, pepper, marjoram seasoning, and 1-2 tbsp coconut cream
Add 4 oz (100-150 g) feta cheese to egg mixture
Cook egg mixture on low heat for 5 minutes
Heat oil and fry onion, mushrooms, jalapeno pepper, and spinach
Add salt to vegetables at the end of frying
Add cheese to vegetables as desired
Place cooked egg mixture on first tortilla
Top with vegetable mixture and fresh cilantro
Cover with second tortilla and press down well to seal edges
Add more cheese to the crust
Bake in oven for 5 minutes at 350°F (180°C) using upper convection
