Coconut & Lime Baked Cod
  1. Pat dry and debone your cod fillet

  2. Lay slices of limes down in the tray, placing the cod fillets on top

  3. Add all the other ingredients and mix well

  4. Cover with foil and bake in the oven for 25-30 minutes at 180°C

  5. Serve over rice, add lots of the coconut broth, sprinkle over the coriander and a tablespoon of chilli oil
