Preheat your oven to 180 degrees Celsius
Add all of your ingredients, apart from your taco boats and cheese, into a large mixing bowl. Season with salt, pepper and the packet of taco seasoning. Mix well until fully combined.
Lay out your taco boats onto a baking tray. Spoon ⅛ of the mix into each of the boats until all of the egg mixture has been used.
Level it out and then top each one with 18g low fat cheddar.
Bake in the oven for 20-25 minutes or until the egg has fully set and the cheese has melted.
Garnish with extra salsa, a tsp of fat free greek yoghurt and fresh coriander. If you are meal prepping. Add this fresh just before serving.
