Preheat the oven to 180°C. Add 1 ½ tins of Mr Organic Butter Beans to a baking dish, drizzle with olive oil and balsamic vinegar and coat well.
Pour in the chopped tomatoes, season with oregano and some torn basil – save some for later. Season with salt and pepper, and stir.
To make the Cheesy Bean Sauce, blend the remaining butter beans, plant milk, cashews, nutritional yeast, garlic, mustard and lemon juice. Once smooth, season with salt and pepper.
Pour the sauce over the butter beans in the dish. Sprinkle on torn basil and place in the oven to bake for 30 mins until golden.
Garnish with remaining basil and serve with garlic bread or as a bean-loaded side!
