Chewy Miso Brown Butter Oatmeal Cookies
  1. Preheat your oven to 375°F (190°C).

  2. In a small saucepan, melt the butter over medium-high heat. Continue to cook, stirring occasionally, until the butter foams, then browns (about 4-5 minutes). The butter will smell nutty and toasty when it's ready. Remove from heat and let cool for a few minutes.

  3. In a large mixing bowl, combine the flour, baking soda, and salt.

  4. In another bowl, whisk together the browned butter, miso, granulated sugar, and dark brown sugar until well combined.

  5. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.

  6. Add the wet ingredients to the dry ingredients and mix until just combined.

  7. Fold in the oats and chopped chocolate until evenly distributed.

  8. Line a baking sheet with parchment paper. Drop rounded tablespoons of dough onto the baking sheet, spacing them about 2 inches apart.

  9. Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft.

  10. Remove from the oven and let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
