Preheat the oven to 425.
Sear the cabbage. Heat a large skillet over medium-high. Add the butter, then the cabbage wedges. Sear the wedges for about 3 minutes, until browned. Flip them over, add the sat and pepper and sear for another 3 minutes. Add ½ cup of water to the pan, then cover and place in the oven for 20 minutes. After 20 minutes, remove the cover and cook for another 20 minutes, flipping halfway.
While the cabbage roasts, make the hot honey and the whipped feta. Add all the ingredients for the honey to a saucepan and heat over medium heat for about 5 minutes, stirring consistently every minute. Remove it from the heat and place into a small bowl to cool.
Make the feta. Add all ingredients to a food processor or blender and blend until smooth. Set aside.
Spread a small amount of the feta onto a plate, top with the cabbage, then drizzle with the honey. Top with the parsley, walnuts, lemon zest and Parmesan.
