Wash and peel the potatoes, then dice. Boil the potatoes until very soft, then mash or run through a ricer. Strain the mashed potatoes through a fine mesh sieve for ultimate softness.
Add salt, pepper, and butter, then mix until butter is melted.
Pipe the soft potato mixture into little 1 inch balls on a parchment lined baking sheet. Bake the potato balls at 175°C (347°F) for 45 minutes, or until browned and crispy.
Sprinkle with garlic powder or serve with a sauce if desired. Enjoy!
