Wrap tofu block between kitchen towels and press gently to release excess water
Slice tofu or paneer into bite-sized pieces and lightly coat with corn flour
Whisk together sauce ingredients: dark soy sauce, light soy sauce, rice vinegar, brown sugar, cracked black pepper, water, and corn flour
Heat a splash of oil in a non-stick pan
Add tofu and cook on low heat, flipping halfway until golden brown on both sides, then set aside
Add more oil if needed, then add minced garlic, gochugaru, and grated ginger, sauté until fragrant
Optional: add vegetables and sauté until lightly charred
Pour in the sauce and let it sizzle until thickened
Add tofu back to the pan and gently mix to combine
Garnish with scallions and sesame seeds
Serve hot with rice
