Add room temperature butter to a large bowl or the bowl of your stand mixer. Using a stand mixer with the whisk attachment or an electric hand mixer, mix on medium speed for a few minutes.
Scrape down the sides of the bowl with a rubber spatula and mix on high speed for about 5 more minutes, or until lightened in color and a little fluffy. Continue to scrape the sides down every few minutes.
Add the heavy cream and mix for 1-2 minutes on medium high speed. You can start with 2 tablespoons of cream and add more later if you want it more fluffy.
Add in the honey (or skip if you want to make another flavor), then continue to mix on medium to medium-high speed until desired fluffiness, which may take about 5-10 minutes or more depending on your mixer and how much you are making.
Give it a taste and see if more honey or salt is needed, add as desired and enjoy with warm honey butter rolls.
