Vegan Pad Thai
  1. Soak the rice noodles in warm water for 10 minutes, then drain and rinse.

  2. Tear the tofu into chunks, dust with corn starch, and fry in oil until browned.

  3. Sauté onion, garlic, and red pepper for about 5 minutes.

  4. Add the rice noodles, bean sprouts, and scallion greens to the pan.

  5. Mix soy sauce, sugar, and tamarind paste, then add to the pan.

  6. Cook for 3-4 minutes on medium heat until the noodles absorb the sauce.

  7. Serve with crushed peanuts and lime.
