Scalloped Corn
  1. Preheat oven to 350 degrees.

  2. Soften onions in microwave with a small amount of liquid. (Use a couple of Tablespoons of liquid from the whole kernel corn). Allow to cool while completing steps 3 &4).

  3. In a large bowl, beat egg(s) well. Add sour cream and melted butter, mixing well after each addition.

  4. Add Jiffy mix(es) and black and Cayenne pepper. Mix well.

  5. Add each corn separately and mix well to combine.

  6. Bake uncovered at 350 for 45 minute to an hour. Scalloped corn is done when the top begins to develop cracks.
