Draw two 7 ½ inch circles on non-stick baking paper, then place upside on two baking trays
Preheat oven 140°C, bake
Beat egg whites until stiff, then add ½ sugar and beat again until stiff
Stir cornflour into the remaining sugar and carefully fold in
Add vinegar, vanilla, and chopped nuts
Spoon ½ mixture on to each sheet, spread flatish
Bake for 50 - 60 minutes, alternating shelves halfway through
Remove and allow to cool
Whisk cream until thick
Reserving 6 - 8 slices, chop up peach slices and add to cream
Carefully transfer 1 pav to plate, spread with cream mix
Add second pav on top, spread remaining cream
Decorate with peach slices. Serve!
