Peachy Keen Pav
  1. Draw two 7 ½ inch circles on non-stick baking paper, then place upside on two baking trays

  2. Preheat oven 140°C, bake

  3. Beat egg whites until stiff, then add ½ sugar and beat again until stiff

  4. Stir cornflour into the remaining sugar and carefully fold in

  5. Add vinegar, vanilla, and chopped nuts

  6. Spoon ½ mixture on to each sheet, spread flatish

  7. Bake for 50 - 60 minutes, alternating shelves halfway through

  8. Remove and allow to cool

  9. Whisk cream until thick

  10. Reserving 6 - 8 slices, chop up peach slices and add to cream

  11. Carefully transfer 1 pav to plate, spread with cream mix

  12. Add second pav on top, spread remaining cream

  13. Decorate with peach slices. Serve!
