  1. Ribbon the carrots and cucumber thin.

  2. Sprinkle with sea salt and let sit 10 minutes, then drain off the water.

  3. Shred the cabbage.

  4. Toss everything with parsley, scallions, garlic, pomegranate, pumpkin and sesame seeds.

  5. Whisk the dressing.

  6. Pour over and toss.

  7. Eat immediately
