In a big pot add oil, then thinly sliced onion. Cook until onion starts turning brown.
Then add chicken. Cook for few minutes then add Ginger garlic paste
Cook for another 1 minute then add salt, turmeric, chilli and coriander powder
Cover and let chicken cook for 10 minutes.
Add curd, biryani masala, cover and cook for another 10 minutes.
In another pot add water, star anise and javitri and 2 tsp salt
Bring it to boil then add washed rice
Make sure the pot is big and have spice for rice to cook with triple the water. This will make your rice not to stick to each other.
Once the rice is 80% done strain the water out. Remove Javitri and Star anise
If your chicken is completely dried out then add ½ cup water. Give a quick stir. Add chopped coriander, toasted cashews and raisins.
Then add rice.
Make holes in rice add kesar soaked milk or food colour water. Add coriander leaves, cashews, raisins and 1 Tbsp Ghee.
Cover it with a cloth or like me a baking sheet and then a foil and put in the lid.
Keep the temperature of the stove to the lowest and let biryani cook for another 30 minutes.
Enjoy hot with raita
