My Homemade Simple Coco Bread Recipe
  1. Add the coconut milk, butter, egg, yeast sugar and salt into a jug and whisk.

  2. Pour the mixture into a large mixing bowl and add half of the flour.

  3. Whisk together and once all mixed in add the rest of the flour then mix again for about 5 minutes (with the dough attachment)

  4. Once the dough has come together, form into a ball, lightly oil the bowl and dough then place back in the bowl and cover.

  5. Leave in a warm place to prove for 1-1 ½ hours. After this time it should have doubled in size.

  6. Punch out the air, place on a floured surface and knead for 30 seconds.

  7. Divide into 6-8 and roll into balls.

  8. Roll out each ball, butter and fold together.

  9. Place the coco bread on a lined baking try, cover with cling film and allow to rise again for 35-45 mins.

  10. Bake in a preheated oven on 180 or gas mark 4 for 15-20 mins.

  11. Brush with butter and enjoy
