Add the coconut milk, butter, egg, yeast sugar and salt into a jug and whisk.
Pour the mixture into a large mixing bowl and add half of the flour.
Whisk together and once all mixed in add the rest of the flour then mix again for about 5 minutes (with the dough attachment)
Once the dough has come together, form into a ball, lightly oil the bowl and dough then place back in the bowl and cover.
Leave in a warm place to prove for 1-1 ½ hours. After this time it should have doubled in size.
Punch out the air, place on a floured surface and knead for 30 seconds.
Divide into 6-8 and roll into balls.
Roll out each ball, butter and fold together.
Place the coco bread on a lined baking try, cover with cling film and allow to rise again for 35-45 mins.
Bake in a preheated oven on 180 or gas mark 4 for 15-20 mins.
Brush with butter and enjoy
