Heat a bit of olive oil in a small saucepan over medium heat
Add the diced onion and season with a little salt
When fragrant, add the diced garlic
Fry for a few minutes before the onion and garlic brown
Add the cannellini beans with all their juice
Add paprika and garlic salt, stir well
Lower the heat, cover the saucepan and simmer for 10-15 minutes
Check and stir every 5 minutes, scraping the bottom
Add the quartered tomatoes and a little cheese
Continue simmering for another 5 minutes
Taste test to ensure beans are soft and flavourful
Plate up and top with more cheese and a drizzle of olive oil
