Combine dry ingredients: flour, salt, sugar, and yeast
Add warm water and oil. Mix until it becomes a rough dough
Knead for 8 minutes or stand mix for 5 minutes until smooth
Cover for 1 to 1.5 hours until dough rises and doubles in size
Divide into 12 balls and rest for 10 minutes before filling
Flatten or roll each dough ball to about 4 inches across
Add ham and cheddar to each dough ball. Close and pinch to seal; place seam-side down
Cut tiny slits to vent
Brush with butter, salt, and poppy seeds
Bake at 425°F for 15-18 minutes until golden
