Bánh Mì Salad
  1. Add the carrot, daikon and chilli into a bowl. Add salt and sugar then cover with vinegar (I used ACV but any will work).

  2. Set aside whilst you make everything else.

  3. Make your tofu marinade in a bowl by combining all the ingredients.

  4. Air fry at 200c for 20 minutes. Keep the leftover marinade for the dressing.

  5. Make the dressing by adding the mayo, sriracha, sesame oil and lime juice to marinade and mix. I added a splash of the vinegar from the pickled veggies too.

  6. In a large bowl, add your cabbage, cucumber, pickles (squeeze them out a bit), coriander and a pinch of salt and dressing.

  7. Serve with the tofu and sesame seeds.
